Preheat oven to 200 degrees Celsius and line a muffin tray with muffin cases.

Beat butter, sugar, vanilla extract and salt in a large bowl until light and fluffy.

Add eggs, mixed spice, cinnamon and ginger and beat for one minute.

Add the flour and milk and beat until well combined, and then put the chocolate in and mix through until evenly distributed through the mixture.

Scoop the mixture into the muffin cases and fill each one about 2/3 of the way full. Sprinkle the tops with a bit of cinnamon.

Bake in the oven for about 15 minutes or until the muffins are cooked through and golden brown on top. Remove from the oven and cool in cases on a wire rack.
