Double Chocolate Coconut Brownies

Ingredients
  • 200 grams of good quality dark cooking chocolate
  • 125 grams of unsalted butter
  • 1 teaspoon of vanilla extract
  • 2 eggs beaten slightly
  • 1 cup of plain flour
  • ½ cup of desiccated coconut
  • 1 packet of coconut chips
  • 100 grams of your favourite chocolate roughly chopped – I used dairy milk because I had it on hand
Instructions
  1. Preheat your oven to 180 degrees C (350 degrees F) and line a baking tin with baking paper.
  2. In a medium sized microwave safe bowl, combine the dark chocolate and butter, ensuring that the chocolate is broken up into chunks. Melt the butter and chocolate together in the microwave, stirring occasionally until both are fully melted.
  3. Transfer the chocolate mixture to a large mixing bowl and add the sugar and vanilla extract. Stir until fully incorporated, and then mix in the eggs.
  4. Add the flour to the mixture, and stir until just combine.
  5. Add the desiccated coconut, coconut chips and your additional chocolate to the mixture, and stir to mix through evenly.
  6. Pour the mixture into your baking tin and place in the oven for 25 minutes, or until a skewer inserted into the middle comes out slightly dirty but not covered.
  7. Allow brownies to cool before cutting into even pieces.
