Healthy pancakes can be a thing

So anyone who knows me knows how much I love pancakes. They are one of my favourite breakfast items, I think they may have been one of the first things I ever learnt how to cook. I used to make them all the time when I was a kid, because it was so much fun cooking them. Since then, I’ve moved on to more exotic pancake recipes, adding ingredients to make them more fun and tasty than my young mind could have dreamed of. However, of late I haven’t really been making them. I think it’s because of the problem that I always have with pancakes, whether I make them or order them out.

You see, when I eat pancakes, I always end up feeling so full afterwards, like sickly full. Perhaps that’s because I love them so much and so try to stuff as many into my face as I can before I get full. But regardless, I never feel that well. Which would be fine if I stayed full. But I also find that anytime I have pancakes, within an hour I am hungry again. My body just burns through them, which is strange given how sick I feel when I eat them initially. Such a devastating effect to have when one loves pancakes so much, what is a girl to do?

Well, I’ll tell you what a girl’s to do. Find a recipe that provides an alternative to traditional pancakes. For a long time I’d seen recipes around that seemed so easy to make I thought it was too good to be true, but I had always wanted to try them to find out. The recipe calls for only 3 ingredients, and seemed to create pancakes that looked similar to their unhealthy counterparts, but weren’t. I felt surely this was a lie, because nothing healthy ever tastes as good as what it is trying to copy. They tell you it does, and then you end up disappointed. Every time!

But fear not, for I finally tried this recipe for healthy pancakes, and I was amazed beyond words! Not only were these pancakes super easy to make, but they were absolutely delicious. They weren’t like normal pancakes, but they were super tasty! And the fact that they tasted this good, and were good for you, made them a great alternative to regular pancakes. I didn’t feel sick after eating them, but still felt satisfied, almost like I still got a treat.

These pancakes made for a great alternative to our usual smoothie bowl routine on a Saturday, and so I thought I would share the magic with you so you too could have delicious, healthy pancakes to start your day! These were so easy, I think I might need to make them more often.

Ingredients
  • 2 overripe bananas
  • 4 eggs
  • ¼ teaspoon of baking powder
  • Coconut oil as required
  • Toppings: Honey coconut chips, chocolate bukinis, peanut butter, and anything else you can find
Instructions
  1. In a medium sized bowl, mash the bananas. Add the eggs and baking powder, and mix together until combined.
  2. Add a teaspoon of coconut oil to a frying pan on a medium heat. Spoon about 2 tablespoons of the banana mixture into the frying pan once the coconut oil is melted. Be careful not to put too much mixture in for each pancake, these pancakes needs to be small.
  3. Cook on one side for a couple of minutes, or until the pancake lifts up easily using a spatula. It’s important to let it really cook on the first side, as these can be hard to flip.
  4. Allow to cook on the other side until cooked through, about another 30 seconds. Transfer to a plate in the microwave to keep warm.
  5. Continue the process until you’ve used all the batter. You may need to add more coconut oil as required.
  6. To serve: make two equal stacks of pancakes and top with your desired toppings. We added peanut butter and sprinkled coconut chips and bukinis, drizzling honey at the end. You could also top with fresh berries or maple syrup.

And there you have it, I told you it was actually easier than normal pancakes! The only difficult part was flipping the pancakes, so make sure you don’t make them too thick, otherwise you might have a bit of trouble!

I couldn’t believe how tasty these pancakes were, especially given how simple and healthy the ingredients were. I guess it helped that we put a lot of toppings on, but I feel they would taste just as good without the toppings (maybe with just a bit of sweetener such as honey, maple syrup or cinnamon). But for a healthy alternative to pancakes, these really stacked up (get it?) and I actually really enjoyed them. It felt really decadent having these for breakfast, but I didn’t feel all sick and bloated afterwards. I also felt fuller for longer, which was really surprising to me.

These are the perfect, healthy way to bring a bit of decadence into your weekend, especially if you are trying to eat healthy. I felt like eating these I wasn’t missing out on anything, I guess because they weren’t trying to be exactly like a pancake. They tasted different enough to offer something new, and given how simple and easy they were to make, I don’t think you can go wrong!
