The brownies that dreams are made of

This week at work our office got involved in the Red Cross Big Cake Bake. This is a really great cause as it is helping out the Red Cross in continuing their vital operations both in Australia and overseas. But it is also a great cause because it is an excuse for a lot of cake in one place! I am not joking, there was so much cake, it made my head spin! I may have got just a little bit too excited about the actual cake part of it, but that’s the fun of it right?

So when I saw that we were participating in this as a company, I figured that, being a baking lover, I was obligated to bring something along. I mean, why wouldn’t I use this excuse to bake something delicious? You all know how much I love baking, so needless to say I was pretty excited about baking something delicious. But then I had a mild panic attack about what I was actually going to make. I opened up the Pinterest hole and psyched myself out. There are so many options, and what if I made something that people didn’t like? I wanted it to be something delicious that people loved, and something different to what I’ve baked in the past. I was going to make a cake, but our oven is quite temperamental when it comes to cakes, so I decided it needed to be something different. I went from cheesecake, to cookies, to cake, to brownies, to blondies and back around again!

But finally, I settled on a recipe that I adapted which not only sounded delicious, but also helped me to clear out our pantry! You see, we’ve had some huge marshmallows and oreos sitting in our pantry for ages, and I haven’t got around to using them yet. Every time I look to use them for something, I end up making something else. I feel marshmallows especially aren’t that easy to cook with, unless it is smores, which are delicious. So finding a recipe that sounded amazing and helped me clear our overladen pantry was a double win!

Enter the most decadent brownies I think I have ever baked. Seriously, I questioned how much butter I was putting in these, but then I smelt the aroma of chocolate, coffee and melted butter and knew I’d made the right decision. These are not your typical brownies, and not for the faint hearted. But I can guarantee that if you are a sweet tooth, these brownies will not disappoint.

Let me paint a picture for you. These brownies start with an amazing brownie base that had an interesting addition of freshly brewed coffee. You then added an entire packet of oreos to the top of the brownies and bake. Once this has baked, you cover the top of the brownies with a mixture of delicious melted marshmallow and another packet and a half of oreos, and crumble oreos over the top. It is a match made in heaven, and surprisingly easy to make!

Ingredients
Brownies
  • ¾ cup of unsalted butter
  • ¾ cup of baking cocoa
  • ¼ cup of strong freshly brewed espresso
  • 1 cup of caster sugar
  • 2/3 cup of firmly packed brown sugar
  • 2 eggs
  • 2 teaspoons of vanilla essence
  • ½ teaspoon of baking powder
  • ¼ teaspoon of salt
  • 1 1/3 cups of plain flour
  • 12 Oreos
Oreo marshmallow topping
  • 24 Oreos or 2 packets
  • 2 cups of marshmallows
  • 2 tablespoons of butter
Instructions
  1. Preheat oven to 180 degrees Celsius (350 F). Line a brownie tin with baking paper and set aside.
  2. In a microwave safe bowl, melt the butter for 1 minute or until completely melted.
  3. Add the baking cocoa and coffee to the butter and whisk together until smooth and combined.
  4. Add the sugars, eggs and vanilla essence to the bowl and stir to combine.
  5. Add baking powder, salt and flour and stir until just combine. Be careful not to overmix.
  6. Pour the brownie mixture into the brownie tin, ensuring that it is spread evenly and smooth. Layer 12 Oreos evenly over the brownie batter in a single layer.
  7. Place in the oven and bake for 18-20 minutes, or until just set and a toothpick inserted into the centre comes out clean. Remove from oven and set aside to cool.
  8. Meanwhile, crush 1.5 packs of the remaining Oreos in a food processor, or with your hands if you don’t have one. Pulse/crush until it becomes a coarse crumb.
  9. In a large microwave safe bowl, add the marshmallows and butter. Heat in the microwave for 90 seconds, and remove from the microwave. Stir to combine with a plastic spatula (otherwise the marshmallow will stick).
  10. Pour the Oreo crumbs into the bowl with the marshmallow mix and stir to combine.
  11. Once your brownies are out of the oven and have cooled slightly, pour the marshmallow mix over the brownies, using a plastic spatula to smooth the marshmallow mix evenly over the top of the brownies.
  12. Crumble the remaining Oreos over the top, pressing them gentle into the marshmallow mixture to make them stick.
  13. Allow the brownies to cool completely before cutting, or place in the fridge overnight before serving.

And that’s my recipe for delicious brownies that will make all your dreams come true. I feel like it might almost be better to not know what is in these brownies, because they smell so amazing. They seriously made our apartment smell like heaven, and all I wanted to do was demolish the whole batch. Lucky that I was baking for charity, otherwise these bad boys may not have made it.

The brownie mix itself was super easy to make, especially because it only required one bowl and no electric beating. For brownies that didn’t have a chocolate block in them, I was quite impressed by how delicious they were, and how easily they came together. These are seriously good brownies, so if you aren’t feeling like going next level with the marshmallow topping, you could just make the brownies on their own, and you would still be in for a delicious time.

Although slightly more complicated than regular brownies, these ones were pretty easy to make all things considered. For how many ingredients were involved, they came together really easily. It was just a matter of chucking stuff in the microwave and crumbling up a serious amount of Oreos. If you’re up for that, I think overall these were pretty simple, and so delicious that they were worth the effort!

I’m very glad that I got to take these to work instead of having them at home, because I would have eaten the whole lot! The Big Cake Bake was amazing in the end, and there were some delicious cakes and treats. So many that it was impossible to decide which ones to try. But I like to think that these brownies really stood out amongst the crowd! They were a good size too which meant people could just pick them up rather than having to cut a slice of cake, so would be perfect for any event or picnic. They also look really impressive for the amount of effort required, so a winner all round! I mean, it was for charity and not a competition, but I like to think these brownies won first place!
