Cut your watermelon in half lengthways and spoon out the inside until you have a pretty even layer around the outside of the watermelon (you can use the inside for cocktails so save this for later).

Place each half in a tray with a bed of paper towel around the edges to stop each half from moving around too much.

In a large bowl, add the jelly and gelatin together and pour in the boiling water. Whisk for 2 minutes, or until all the gelatin has dissolved.

Add the 4 cups of vodka, and whisk to combine.

Pour the whole vodka jelly mix into the two halves of the watermelon evenly, ensuring you use all of the mix.

Place both halves of the watermelon in the refrigerator, and leave in there until the jelly is completely set. This should take about 4-5 hours, but we left it overnight.

When you’re ready to serve, take the watermelon halves out of the fridge. Slice into 3-5 cm pieces crosswise, and then cut these big slices into 2-3 smaller wedges.

Keep the pieces in the fridge until you are ready to serve. Serve on a platter and ensure you don’t leave in the sun.
