Baked Eggs Skillet

Ingredients
  • 10 thick slices of chorizo or salami roughly chopped
  • 1 tsp of olive oil
  • 2 cloves of garlic
  • 1 tsp smoked paprika
  • 2 tbs roughly chopped fresh parsley
  • 2 tbs roughly chopped fresh basil
  • 1 can of diced tomatoes
  • 1/2 cup of water
  • 3-4 eggs
  • 100 grams of feta cheese crumbled
  • 1 handful of baby spinach
  • sprinkle of shredded cheese
  • salt and pepper to taste
Instructions
  1. Preheat the oven to 180C (350F). Heat a medium sized oven proof fry pan or skillet over a medium heat on the stovetop. Add the chorizo or salami, and cook for 4-5 minutes, or until it starts to crisp.

  2. Add the olive oil, garlic, paprika, parsley, basil, tomato and water to the pan, and stir to combine. Bring to a simmer and allow to cook for 5-7 minutes, or until the tomato sauce has reduced down. Add the baby spinach and stir.
  3. Create 3-4 dips in the sauce and crack the eggs into each dip. Sprinkle the feta cheese and shredded cheese over the top of the mixture, along with some salt and pepper to taste.
  4. Place the skillet in the oven and allow to cook for about 10 minutes, or until the eggs are cooked and the cheese has melted.
  5. Remove from the oven and serve immediately with some crusty bread for dipping.
