10thick slices of chorizo or salamiroughly chopped
1tspof olive oil
2clovesof garlic
1tspsmoked paprika
2tbsroughly chopped fresh parsley
2tbsroughly chopped fresh basil
1can of diced tomatoes
1/2cupof water
3-4eggs
100gramsof feta cheesecrumbled
1handful of baby spinach
sprinkle of shredded cheese
salt and pepperto taste
Instructions
Preheat the oven to 180C (350F). Heat a medium sized oven proof fry pan or skillet over a medium heat on the stovetop. Add the chorizo or salami, and cook for 4-5 minutes, or until it starts to crisp.
Add the olive oil, garlic, paprika, parsley, basil, tomato and water to the pan, and stir to combine. Bring to a simmer and allow to cook for 5-7 minutes, or until the tomato sauce has reduced down. Add the baby spinach and stir.
Create 3-4 dips in the sauce and crack the eggs into each dip. Sprinkle the feta cheese and shredded cheese over the top of the mixture, along with some salt and pepper to taste.
Place the skillet in the oven and allow to cook for about 10 minutes, or until the eggs are cooked and the cheese has melted.
Remove from the oven and serve immediately with some crusty bread for dipping.
