Balsamic chicken: a match made in heaven

A few weeks ago I tried a recipe and I’m only finally getting around to sharing it with you all. It was that good though that I didn’t want to forget to post about it! I love sharing recipes that I come up with that just work with you all, hopefully they can bring you some joy in the kitchen too!

The other weekend at the markets I decided to buy some mushrooms. I absolutely love mushrooms but always seem to forget to buy them. There’s a stall at the markets that just sells mushrooms, and I decided it had been too long since I’d made something delicious using one of my favourites! They really lend themselves to so many amazing dishes, especially when paired with flavours like garlic and thyme. I’m getting hungry just thinking about it!

I searched around for some inspiration and decided that I would try balsamic chicken. As you might have already figured out, I am a sucker for chicken recipes, and always tend to cook with it. This means I’m always looking for new recipes and ways to shake up my chicken, so I don’t always end up eating the same thing. I couldn’t believe I had never tried balsamic chicken before, and figured it was about time I tried it. I had such awesome results that I just had to share this recipe! It was super delicious, and the perfect meal for a weeknight!

Balsamic Chicken with Mushrooms

Ingredients
  • 500 grams chicken breasts
  • 2 tsp coconut oil or olive oil
  • 200 grams mushrooms sliced
  • 1 brown onion sliced
  • 2 garlic cloves minced
  • 1/2 cup chicken stock
  • 2.5 tbsp . balsamic vinegar
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 tbsp . parsley chopped
Instructions
  1. Season the chicken with salt and pepper. Add the oil to a large fry pan over a medium high heat.
  2. Add the chicken to the fry pan and sear on both sides until golden brown, about 2-3 minutes. Remove and set aside.
  3. Add the onion to the pan and cook, stirring occasionally until browned slightly. Add the garlic and mushrooms and cook for 3-4 minutes until mushrooms begin to soften, ensuring you stir to keep from sticking.
  4. When the mushrooms are cooked, add the chicken stock, balsamic vinegar, and thyme to the fry pan. Stir and scrape anything stuck to the fry pan off the bottom, and to coat evenly.
  5. Add the chicken to the fry pan and let simmer for 10-15 minutes on low heat or until chicken is fully cooked. Stir throughout, adding a bit more water if it starts to stick.
  6. Once the liquid in the pan has reduced and the chicken is cooked, stir in fresh parsley and serve.

This recipe makes for an absolutely delicious chicken dish, and what I love most about it is that you don’t need any really special ingredients. It takes really simple flavours of balsamic, thyme, garlic..those sort of classic flavours, and brings them to life with mushrooms and chicken. It was truly a next level chicken dish, and one that I’m going to keep on file for those weeknights where I feel like something a little bit special. It has a really nice Italian flavour to it, and I’m always up for Italian food!

This dish was quite easy to make, so it’s perfect for a weeknight. I was able to let it simmer and go and do other things, which is perfect when you are a little busy! It is also quite simple – just chuck all the ingredients in and hey presto! you have an amazing weeknight dinner. You all know how much I love a nice, easy recipe, and this definitely ticked all the boxes!

This dish is also really nice and healthy, which is great for me as I’m always looking for ways to eat healthy without feeling like you’re missing out. Sometimes I feel that eating healthy can be a bit bland and boring, but this dish proves that it doesn’t have to be boring eating healthy! You can still have awesome, tasty meals that keep you kicking towards your goals. I know we are going to Italy next week so I’m looking for any ways to lose a bit of weight before I eat pasta for every meal (something I am very excited about)! I guess this is sort of Italian style, so in a way it’s getting me prepared!
