This week I wanted to share with you a delicious recipe that I whipped up one Sunday morning for my partner and I. We are pretty terrible when it comes to food on the weekend. We tend to always eat out, especially for breakfast, and don’t often cook at home, leaving this for the weekdays. I don’t feel like this is the worst thing as we don’t really eat out during the week (well, I can speak for myself, my partner seems to buy a lot of lunches out!), but sometimes it’s nice to shake it up a little bit. Sometimes you really don’t feel like getting out of your PJs and getting ready, finding a cafe, waiting for a table, waiting for your food, and paying $16 for avocado on toast. Sometimes you just want to chill at home and have a nice, lazy morning with a tasty meal in hand!
This was one of those mornings. My partner had been out the night before and was feeling a bit worse for wear, and I was in the mood for cooking. So I decided to try out a recipe that I came up with based on ingredients we had on hand, and it ended up turning out really well! It’s for this reason I thought I’d share it with you.
Although baked eggs isn’t the easiest or quickest recipe to make, it is absolutely delicious. And I mean compared to something like bacon and eggs, it’s a little complicated. But in itself it isn’t actually too hard to make when you compare it to other things like pancakes or waffles. Once you have the sauce perfected it’s just a matter of adding the eggs and baking for a couple of minutes. It’s actually quite fun to make, and like an omelette, can be made using whatever you have on hand. It’s the perfect solution to wanting a delicious weekend breakfast, but not feeling like going out to get something.
- 10 thick slices of chorizo or salami roughly chopped
- 1 tsp of olive oil
- 2 cloves of garlic
- 1 tsp smoked paprika
- 2 tbs roughly chopped fresh parsley
- 2 tbs roughly chopped fresh basil
- 1 can of diced tomatoes
- 1/2 cup of water
- 3-4 eggs
- 100 grams of feta cheese crumbled
- 1 handful of baby spinach
- sprinkle of shredded cheese
- salt and pepper to taste

Preheat the oven to 180C (350F). Heat a medium sized oven proof fry pan or skillet over a medium heat on the stovetop. Add the chorizo or salami, and cook for 4-5 minutes, or until it starts to crisp.

Add the olive oil, garlic, paprika, parsley, basil, tomato and water to the pan, and stir to combine. Bring to a simmer and allow to cook for 5-7 minutes, or until the tomato sauce has reduced down. Add the baby spinach and stir.

Create 3-4 dips in the sauce and crack the eggs into each dip. Sprinkle the feta cheese and shredded cheese over the top of the mixture, along with some salt and pepper to taste.

Place the skillet in the oven and allow to cook for about 10 minutes, or until the eggs are cooked and the cheese has melted.

Remove from the oven and serve immediately with some crusty bread for dipping.
This baked egg recipe was absolutely delicious, and I definitely want to make it again! As I said before, once you have the sauce full of flavours you like and a little bit reduced, it’s just a matter of adding the eggs and cheese and baking, and then you have a delicious meal! It’s also pretty good for you too, especially as I didn’t add that much cheese to it (you can definitely leave it out, and also leave out the salami if you want it to be super healthy or vegetarian). But seriously you can’t go wrong with these flavours, and there’s nothing better than starting your Sunday m0rning with a steaming skillet of this baked eggs, and some crusty bread to soak up all the juices. I think that was the best part!
This dish is super easy and quick to make. Although not as quick as something like bacon and eggs, you’ll be rewarded for the additional effort with the amazing breakfast you get. It also seems fancier than it actually is, so if you are making it for someone you want to impress, it will tick all the boxes. I think the best part about it too is knowing that you’re having a tasty meal but not paying an arm and a leg for it. Plus, you get to stay in your pajamas, so it’s a win win!
