Lazy Sunday Breakfast

This weekend I decided to branch out with my weekend breakfast game. I was home alone on a Sunday morning and instead of going out for breakfast, I decided I would make it at home. As much as everyone knows that I am all for going out for an early breakfast and beating the crowds, sometimes you just want to stay in your pajamas all morning and watch some Netflix with your eggs. Plus, eating out for breakfast really adds up. By the time you get a coffee and some food, you are spending over $25, which I’m all for sometimes, but I’m trying to stop it from becoming a habit. This will mean when I do go out it is a little more special, and something to look forward to. Plus, if I feel like eating something simple, I am really against spending $16 for it, especially if it is literally poached eggs on toast. I mean seriously? When all you need to do is put some eggs in water and some toast in a toaster, is it really worth that money? I should mention that when I go out for breakfast I make a point of ordering something I can’t easily make at home, but it’s the principle that really gets me.

Anyway, back to my recipe, rant about overpriced breakfast over. The point is I was at home sitting in my pajamas, contemplating what breakfast I felt like. I decided to try something new that I’d never given a try, because I had a few eggs left over from the week that I needed to use. I wanted something healthy but still delicious, so I opted for trying out an egg white omelet. Now, I never really thought I’d be one to make one of these, as usually I can’t be bothered to separate the egg white from the egg yolk, and don’t really mind eating the whole thing. I mean, eggs are good for you, so why just have the egg white? But I was speaking to one of my friends during the week and she put the idea in my head when she was talking about healthy cooking, and I decided it was something I should try. I mean, how do you know if you are going to like something if you’ve never tried it?

I have to mention that I didn’t really make this as healthy as I could have, because I find it hard to eat omelets without adding cheese, but I think overall it was pretty healthy. Plus, the great thing about omelets is that you can literally add any filling you want or have on hand, so there are plenty of ways to make it suit your taste! For a weekend meal it was super quick, super tasty and the perfect edition to my Sunday morning. Plus, it felt even better that I knew I would have had to pay at least $16 to have the same thing at a café, and I wouldn’t have gotten to add whatever I wanted, or stay in my pajamas, which was the most important thing.

I know omelets aren’t really that exciting, but I decided to write a post about this one because it was really delicious, and I think it’s always good to have a quick, easy and healthy omelet recipe on hand. It’s one of those things people don’t often write recipes for, but sometimes it’s nice to get some guidance about what does well together. Maybe this weekend you can have your own egg white omelet, and enjoy your Sunday morning as much as I did!

Ingredients
  • 2 eggs egg whites separated from the yolks
  • 1 teaspoon of water
  • Half a teaspoon of chilli flakes
  • A pinch of salt
  • A pinch of pepper
  • 1 clove of garlic minced
  • 2 teaspoons of chopped parsley
  • A handful of baby spinach
  • Half a tomato chopped
  • A sprinkle of cheddar cheese
  • Olive oil
Instructions
  1. In a small bowl, add the egg whites, water, chilli flakes, salt, pepper, garlic and parsley. Whisk until the egg whites have gone frothy.
  2. In a nonstick frying pan, heat a splash of olive oil over a medium heat. Pour in the egg white mixture, and roll the pan around to ensure that the mixture completely covers it.
  3. Add the spinach, tomato and cheese to one side of the pan, laying on top of the egg white mixture. Cook until the egg whites have gone golden brown.
  4. Use a spatula to get under the egg white mixture, and lift the side without filling from the pan. Fold this side over the top of the filling, and move the omelet into the middle of the pan. Cook for another couple of minutes until the cheese melts.
  5. Serve with bread, or on its own, with a generous crack of pepper.

And that’s all there is to it. I know it’s not a fancy omelet, or one of those French ones that you flip in on itself (I don’t have mad French omelet skills unfortunately) but this sure was tasty. I didn’t feel like I really missed the egg yolks either, I was surprised by how easily the omelet stayed together given how little it had in it. I also loved having all the spices and herbs in the omelet mixture because it made it super flavoursome and delicious. The chilli gave the dish a little kick and the garlic was just right.

This was the perfect Sunday morning dish, and you could easily make it a full egg omelet if you wanted. You could also add in whatever you had on hand: ham, mushrooms, a different cheese, all of the above. The sky truly is the limit, which is what makes this such a great breakfast. It’s such an easy bits and pieces before the grocery shop meal, so is perfect if you plan to do your shopping after a Netflix binge. It also means that you can have a tasty meal at home without having to battle the brunch crowds, which is surprisingly filling and satisfying.

I never thought I would say this, but I think I love egg white omelets. I feel like it actually was more successful and easier to flip that my usual omelets, and was just as tasty. I think I might need to make these more often, especially because it is such a healthy option for breakfast. Look out, I may become a home body over the weekend yet! If I can keep cooking these I’ll have no reason to go out of the house for brunch!
