This week I wanted to share with you a recipe that I forgot I had, but I am so glad I pulled out and made the other weekend. I made this amazing chocolate chip cookie recipe when I first really got into cooking, and for some reason recently it crossed my mind. Where had the magical, mystical recipe for those glorious cookies gone? I don’t know what prompted me thinking about them, but once the distant memory of those delicious cookies was in my brain, all I could do was think about them. You see, I do have this thing about chocolate chip cookies, and all I could remember was that these particular ones were just about the best I’d ever made. Big call, I know, especially as the last time I made these was before I even started the blog!
So I checked on Pinterest but couldn’t find the recipe anywhere! I have to admit, I panicked a bit. Would I never get to make these cookies again? Instead of falling into a pit of despair, I trawled through Pinterest for a while, but to no avail! I have no idea where I found the first recipe for these cookies, but they seem to have disappeared from the internet. What a travesty!
So I was about to give up hope, but I remembered that when I first started cooking and didn’t have a blog to record all of the things I was whipping up that I liked, I had a cook book where I was hand writing recipes. Call it what you will, but I call it the Origin of Ella Eats *Queue impressive music*, and it actually has some amazing recipes that I curated once upon a time that I can’t seem to find anywhere else, but I know are all winners. Truly, it is a piece of history, and one with very neat handwriting, and a few chocolate smears. I opened this book up to the ‘Dessert’ section, and low and behold, the recipe was there. So naturally, I needed to firstly bake these cookies, and then immortalise them on the internet.
I know I say this a lot, but I have never meant this so much in my life. This cookie recipe is too good to keep to myself, it must be shared with you all. It is hands down the best cookies I’ve ever made. Period. End of story. This is a big call, because I’ve made many cookies in my time (you just have to look at the cookie section of my recipes page), but these definitely take the number one spot. They are so good that my partner had a moment while he was eating them when I think he loved the cookie more than me. I’m ok with that because I think I myself had a similar moment when I ate one fresh out of the oven. You can tell by the name starting with butter that they aren’t the healthiest cookies by any means, but hey, when something tastes this good, you really don’t care! Give me butter, sugar and chocolate all wrapped up with some additional ingredients into cookie form any day! I can do is promise you that if you make these cookies and eat them, you’re going to have a great time!
- ½ cup packed brown sugar
- 1 cup unsalted butter
- 1 tsp vanilla extract
- 2 ¼ cup plain flour
- ½ tsp baking soda
- 1 cup unsalted butter
- ½ cup caster sugar
- 1 cup packed brown sugar
- 1 tsp salt
- 2 tsp vanilla extract
- 2 large eggs
- 1 block dark cooking chocolate broken into smaller chunks
- Toffee

Line a baking tin with baking paper and set aside near your stove top.

In a saucepan over a low heat, combine the brown sugar, butter and vanilla extract. Stir until the butter has melted, and then turn the heat onto a medium heat and allow the mixture to boil. Stir for a few minutes until the toffee is bubbly and thick (make sure you keep stirring to avoid burning).

When the toffee is done, pour onto the prepared baking tin. Smooth out with a spatula, and place in the fridge to cool while you make the cookies.

Preheat oven to 150C. In the bowl of a stand mixer, beat the butter, caster sugar and brown sugar until light and fluffy on a low speed. Add the salt, vanilla and eggs, and allow to combine for about 1-2 minutes.

Add the flour and baking soda, and beat until completely combined, using a spatula to brush down the edges if needed.

Remove the bowl from the stand mixer and add the chocolate chunks. Remove the toffee from the fridge and crumble into small chunks before adding to the cookie dough. Stir through with a wooden spoon.

Line two baking trays with baking paper. Roll small dough balls using your hands and place on the baking trays until you have used all the mixture, allowing a bit of space between each cookie.

Bake the cookies until golden around the edges. I did 10 minutes, but if you want less gooey cookies, cook them for a few additional minutes. Allow to cool completely before removing from the baking trays, and store in a container for up to a week (if they last that long).
So it isn’t the simplest cookie recipe you will ever make, but I can guarantee that these cookies will blow your mind! They are totally worth the extra effort, especially with making your own toffee. I find a lot of recipes ask you to use pre-made toffees, and for how simple it is to make your own, I think it is totally worth that extra little bit of effort on your part! It makes the cookies that much better, I promise you. All that extra love will make them that much more delicious.
The original recipe did call for less toffee, but when I make chocolate chip cookies, I love to overload them with all things chunky. I never use small chocolate chips, and I love biting into a chocolate chip cooking and getting a giant piece of chocolate along with it. I think adding in all the toffee really brings these up a notch as well, because it compliments the chocolate and ensures that every bite gets some of that extra goodness. You could leave some of it out if you want your cookie to toffee ratio to be different, but I promise I got no complaints when others tried these.
I can’t even begin to explain how good these cookies are. They are soft, gooey and full of delicious filling. They are everything that cookie dreams are made of and more, and once you try them they will probably creep into your dreams too! These are a great and fun recipe to make, and even though they might seem complicated, they really aren’t that difficult at the end of the day. I promise the effort you put in will pay off, although it will be hard to resist eating the whole batch!
