Delicious Berry Salad

This month is going to be a crazy month for my partner and I, as we are moving house! I sort of cannot believe after moving interstate I am already moving again, it feels like a bit of a sick joke. But I know it will be worth it when we are in our beautiful new apartment, so I keep telling myself! I do have to say, it is so much easier moving across the Brisbane river than it was moving from Melbourne to Brisbane! At least we’ve been able to move most stuff with our cars, and not had to worry about using copious amounts of bubble wrap to get it from A to B.

So we’ve been frantically packing up whilst doing some work around the new apartment, and then I realised when talking to my parents that I’d been a terrible daughter and hadn’t actually had them over to where we live currently for a meal! My mum and sister have visited, but my dad had never seen the apartment! It makes it worse that they live just down the road, so I really had no excuse! To rectify the situation, I offered to have everyone over to our apartment, mid packing of course, for a breakfast to celebrate Father’s Day. It was so nice getting to see my dad for Father’s Day after being in Melbourne last year, so I wanted to make it a bit special and show him the apartment at the same time before we say goodbye to it.

I was a bit unsure about what to cook as my normal breakfast go to’s, like baked eggs, were a no go as my mum isn’t a fan of eggs. My sister is also sadly gluten and dairy intolerant, so I wanted to make something everyone could enjoy that was still tasty. I ended up making for the main course a sort of big breakfast with a whole heap of bits and pieces to satisfy everyone’s tastes, and it was absolutely delicious if I do say so myself! But I didn’t really want to just serve the big breakfast, because I am a classic over server who always goes over the top! I figure it was Father’s Day though, so it was appropriate to make the breakfast a little bit more special than your regular breakfast.

I decided to opt for a fruit salad with a bit of a twist. I have been loving how cheap berries are at the moment, especially at the markets! Blueberries have just come into season, so you can get a whole heap of delicious berries for cheaper than usual. So I decided to hero the berries and make a nice, fresh, delicious fruit salad to have before we tucked in to our big breakfast! The recipe I came up with was so good that not only do I want to make it again and again, I figured it was worth sharing with you all. It was so simple to make, and for something so easy, it was absolutely delicious! The best part of all is that it is quick and easy but looks really fancy, so it’s a great recipe to have on file for when you need something a bit special up your sleeves.

Berry Salad with Lime and Mint Dressing

Servings: 5 people
Ingredients
  • 500 grams fresh strawberries, rinsed
  • 1 punnet fresh raspberries, rinsed
  • 1 punnet fresh blueberries, rinsed
  • 1/4 cup fresh lime juice
  • 1/4 cup honey
  • 1 handful mint, finely chopped
  • 500 grams yogurt (optional)
Instructions
  1. Chop the strawberries into quarters and remove the stems. In a medium sized bowl, combine the strawberries, raspberries and blueberries.

  2. Using a jar or container, combine the lime juice, honey and mint. Put the lid on the container and shake to completely combine. 

  3. Pour the lime, honey and mint mixture over the fruit in the bowl. Use a spoon to completely coat the berries with the sauce. 

  4. Serve with yogurt on the side. 

Ok, I told you it was easy, and now you see just how easy it is! Honestly, for how tasty this fruit salad was, it was super quick and simple to make. I can’t wait to make it again, if only berries weren’t usually so expensive I would eat this everyday! I love the freshness that the lime and mint dressing brings to the berries, it gives them an extra zing, and the mint goes perfectly with these sorts of berries. You could also add in other berries, such as cherries or blackberries, depending on what is in season.

This fruit salad went down a treat with breakfast on the weekend. We were lucky enough to have some sneaky mimosas with breakfast, and it was a great way to start off a delicious meal. I paired the berry salad with some caramelised fig greek yogurt, and it was absolutely beautiful! There was none of the berries left, so I take that as an indicator that it was a good recipe! You could just as easily whip this out for dessert with some ice cream, I’m thinking coconut flavoured ice cream would go down a treat with this beautiful salad! If you don’t want to have dairy with it, the berry salad is just as good solo. You could even add some muesli if you wanted to bulk it up a bit!

It was so nice having my family over for breakfast, and I’m glad I could make them food they enjoyed. I know in the new place I will definitely be making more of an effort to have them over for meals. It’s so great being back in the same city with them, I just need to take advantage of it more!
