I have a little dilemma on my hands. I’m not saying it’s a terrible dilemma. I mean, if I were to be in any dilemma I would want it to be involving food and chocolate, as this one is. But none the less, it is a dilemma.
Remember those brownies I put on the blog that I named the ‘Better than anything’ brownies? Well, I don’t know how this has happened, but I might have found brownies better than these ones.
I know, what an amazing world we live in where someone can keep finding brownie recipes that surprise and astound her.
Anyone who knows me, will know that I am absolutely obsessed with Masterchef. When it is on, it literally takes over my life. For those who have not had the pleasure of watching it, the Australian version of this show is sort of a cooking show institution where home cooks battle it out 5 nights a week to become the next Masterchef. It is excellent TV, and I am so addicted it is not even funny. But anyway, they had a challenge where they were cooking food for a bakery in Melbourne, and one of the contestants cooked these amazing looking raspberry brownies. Naturally, I pinned the recipe right away because I figured you can never have too many chocolate recipes.
We’ve had a rather busy few months at work pushing to the end of the financial year, and I figured that everyone could use a little pick me up in the form of chocolate goodness. So I whipped this recipe out a little sooner than anticipated (try the night after the episode aired). But I am so glad I did!
These brownies are goey, decadent and delicious. They are so soft on the inside, but still have that crunchy brownie crust. One of the girls at work told me that they were the best brownies she had ever eaten, and I value her opinion in sweets above most peoples. So I figured that clearly this brownie recipe was not only worthy of a blog post, but might be a serious contender for my favourite cheesecake brownies! You be the judge though, you might just need to try them both!
Chocolate Brownies
Adapted from Masterchef Australia
Serves: 16
Preparation: 20 minutes
Cooking Time: 30 minutes
Ingredients
- 200 grams of Butter
- 200 grams of Dark Chocolate (yes, I am aware that the ratio of butter to chocolate in this recipe is 1:1, try to forget about it)
- 3 eggs
- 250 grams of brown sugar
- 80 grams of plain flour (I substituted a gluten free flour blend in the same quantity)
- 60 grams of cocoa powder (you can also substitute half of this for Cacao if you want, this is what I did and it tasted good)
Method
- Preheat your oven to 160 degrees Celsius
- Break the chocolate up into smaller pieces and place in a saucepan along with the butter
- In a medium saucepan, melt butter and chocolate over a low heat until the chocolate is melted and the butter is completely incorporated. Ensure you continue to stir this mixture to avoid burning the chocolate
- Wisk eggs and sugar until combined in a mixing bowl. This took a couple of minutes for me, as I whisked the mixture until it was a little bubbly and airy
- Sieve flour and cocoa into the egg and sugar mixture and gently fold this through to combine.
- Slowly pour the chocolate and butter mixture into the mixing bowl and use a spoon to mix together until the mixture is fully incorporated. You should wind up with a nice gooey bowl of chocolate batter goodness
- Pour the mixture into a lined baking tin, about 20cm x 30cm worked for me but use whatever is on hand.
- Place in the oven and cook for 30 minutes or until the brownies are just cooked through. I find the best tell is that the top gets a lovely film on it that begins to crack.
- Pull the brownies out of the oven and set aside to cool. Once they are cool, cut into 16 pieces and serve.
And there you have it. I love brownies because they are so simple to make, have minimal washing up, but are something you can never go wrong with. Everyone loves a good brownie, and I can tell you these went down a treat. They are so gooey in the centre, deliciously decadent, and the firm crust on the top adds just a little bit of crunch.
I would highly recommend trying these brownies for any or all occasions. Stressed at work? Brownies. Party? Brownies. Having a bad day? Brownies. Having a good day? Brownies!
