For those of you who have been reading my blog for a while, you may have noticed how much I love all things brownies. I don’t know what it is about them, but I just love to bake them. Perhaps its because they are super gooey and delicious, and always hit the spot in my mind. They are also a quick and easy way to get a chocolate hit, and can be easily added to from your base mixture. I love how versatile a good brownie recipe can be, lending itself to all sorts of hybrids.
So when I came to Sunday and realised that I hadn’t baked in far too long, I decided to get a little creative. After all, what’s life without a bit of trying of new things? I decided that it had been far too long since I’d had brownies in my life, and plus I was craving a chocolate fix that only gooey, chocolaty brownies could provide, so I set my brain to work deciding on what to cook.
For some reason I landed on coconut. Who doesn’t love the combination of chocolate and coconut? I myself am a massive fan, and I know when I am craving a chocolate bar, Bounty always goes down a treat. It was meant to be, as we’ve been trying to clear out our pantry of bits and pieces, and I happened to have a lot of coconut on hand that I could chuck in. It was really a win win situation: I got coconut brownies, and in the process helped to clear out the cupboard. All for the good of the cause, I swear.
These brownies were absolutely delicious, despite my concern that they might be a little bit interesting given that I was going completely off book. But I feel like when it comes to chocolate and coconut, you can’t really go wrong. They made the house smell amazing as they cooked, and it took all of my will power to not eat the whole batch once I started. Chocolate has always been my weakness, and so adding coconut to it was almost too good to share.
- 200 grams of good quality dark cooking chocolate
- 125 grams of unsalted butter
- 1 teaspoon of vanilla extract
- 2 eggs beaten slightly
- 1 cup of plain flour
- ½ cup of desiccated coconut
- 1 packet of coconut chips
- 100 grams of your favourite chocolate roughly chopped – I used dairy milk because I had it on hand

Preheat your oven to 180 degrees C (350 degrees F) and line a baking tin with baking paper.

In a medium sized microwave safe bowl, combine the dark chocolate and butter, ensuring that the chocolate is broken up into chunks. Melt the butter and chocolate together in the microwave, stirring occasionally until both are fully melted.

Transfer the chocolate mixture to a large mixing bowl and add the sugar and vanilla extract. Stir until fully incorporated, and then mix in the eggs.

Add the flour to the mixture, and stir until just combine.

Add the desiccated coconut, coconut chips and your additional chocolate to the mixture, and stir to mix through evenly.

Pour the mixture into your baking tin and place in the oven for 25 minutes, or until a skewer inserted into the middle comes out slightly dirty but not covered.

Allow brownies to cool before cutting into even pieces.
I love this brownie recipe because it is so easy to make, you don’t even need electric mixers! They are almost too easy and quick to whip up, which means that once you’ve tried making this brownie recipe, you will find it all too tempting to bake them again. Oh, did I mention that the raw mixture is absolutely delicious? Make sure you lick the bowl and spoon clean!
I brought these brownies into work, mainly because I was concerned about having them in my house for fear of consuming all of them (it was a real threat). My co-workers absolutely loved them, and there were a lot of happy people that afternoon. Even for the next week I was having people mentioning them to me, so I think we might be on to a winner! I mean, who doesn’t love homemade brownies, but these ones I feel were next level, If I do say so myself. Perhaps I just really love chocolate and coconut, but I feel that if others were saying it too, it must be true!
This is a great recipe to have on hand for any time you need to whip up something quick and easy, that is guaranteed to put smiles on people’s faces. I love how easy brownies are to make, especially when they have so little washing up! You can also set and forget while the brownies cook, and so they make for the perfect option if you are having people over or just need to get a couple of other things done in the meantime. These brownies would go perfectly with ice cream, I’m just saying!
