This past week has been a massive whirlwind with moving interstate. As far as whirlwinds go, it’s been good, minus a few hiccups and stresses along the way! But it’s been good having the time to settle in to my new life back in Brisbane, unpack my suitcases and catch up with friends and family.
It’s been a busy couple of weeks, with finishing up my job, packing up my life, and moving back to Brisbane, unpacking my life, buying a car, dealing with removalists, all of the above. It’s been hard to find the time to do what I love most: baking. Especially as I’m still trying to get a feel for a new kitchen!
So I was lucky that I did so much baking back in Melbourne that I could draw on for blog posts! I guess this is probably the last post I will do from my old kitchen in South Yarra. It served me well as a kitchen, although it was on the cosy side! It certainly wasn’t really made for people who actually cook, but as two cooks we managed to make it work the best we could! The oven certainly took some getting used to, in that it usually burned the top of my baked goods and left the middle raw. As a result I served many the gooey brownies, ‘pudding’ cakes, and slightly under cookies. I guess that’s what comes with character!
I only hope that the new tenant enjoys the kitchen like we did. We baked and cooked many the things in their over our year, although I confess it was mostly popcorn! But in the last couple of weeks before we moved I was trying to use up as much of my baking ingredients as possible, because I didn’t see the point in transporting things like flour and sugar up to Brisbane. So I was being really creative with my baking, often adding in little bits and pieces and finding ways to use leftover chocolate and condiments where I could.
So I stumbled upon this awesome recipe that I figured I could ramp up by using up even more things in my pantry for brownies. Now, I love brownies just about as much as I love chocolate chip cookies (which is a lot), but I’m often hesitant to try new recipes because my sister’s recipe for brownies is beyond good. I never feel like anything can compare to those glorious brownies she makes. But I have always wanted to try Nutella brownies, and as I had a whole jar of Nutella in my pantry, I thought there was no time like the present! Plus it was Valentine’s Day and I decided that chocolate was the perfect addition to my evening.
These brownies are absolutely delicious, and the best part about them is that they are so simple to make. Seriously, they are actually dangerous in how easy they are to whip up and have ready to eat! Although nothing could ever replace my sister’s brownies, these came pretty close as an alternative! Plus they include Nutella, which is always a good choice.
- 370 grams of Nutella
- 2 eggs
- 1/2 cup of plain flour
- 1/2 teaspoon of baking powder
- 1/2 cup of white chocolate chips
- 1/2 cup of caramel fudge bites optional

Preheat the oven to 180C (350F) and line a square baking tin with baking paper.

In a large bowl, whisk together the eggs and nutella until combined and smooth.

Fold in the flour, baking powder, chocolate chips and caramel fudge until just combined.

Pour into the baking tin and spread evenly. Bake for 22-26 minutes, or until a skewer inserted into the middle comes out almost clean.

Allow to cool completely in the pan and then cut into even squares.
I took these brownies into work, and no joke they were gone well before the end of the day. I think one person had about four, they were so good! Because I was leaving the next week there were definitely a few people who were quite upset that this was the last time I’d be baking for them. I felt like it was almost my parting gift to them, plying them with chocolate to avoid tears!
These brownies are so chocolatey and decadent, especially if you make sure they are a little under. I waited until mine cracked on the top and then I took them out of the oven, and so they were super gooey in the middle. Compared to my sisters brownies, I felt these were a little harder to cut, so if I make them again I might put them into the fridge for a little bit to harden before cutting up. But that could have just been me getting over excited to try one!
These brownies overall were super easy to make. I mean if you don’t add chocolate chips and fudge, they are only 5 ingredients! How good is that? And you only need one bowl, and don’t even need to get out your mixer! This is why I love making brownies so much. Not only are they quick and easy, they have so little washing up and effort to bring them together. Honestly, it’s dangerous how easy these are to have whipped up in under an hour. I better not leave any Nutella in my new place!
