Chai Spiced Snickerdoodle Cookies

In winter, does anyone else feel like they constantly want sweet things? I myself find I start craving hot chocolates, cookies, cakes, anything really. And I have a big sweet tooth normally, so you can imagine how much more amped up my sweet tooth gets over the average person. But I was a little stuck on what recipe to try for the blog, and I figured that I may as well give in to my cravings and give my office a little bit of cookie love.

I’ve tried this recipe before, because my partner loves snickerdoodle cookies. For anyone who doesn’t know, these cookies are pretty much heaven manifested in glorious cookie dough rolled in sugar. I mean what else could you want? Perhaps some chocolate chips, but hey! That’s for another day. Snickerdoodles are a great cookie, and these ones are even better, because they are chai spiced. If anything reminds was to remind me of winter, besides hot chocolate, it would be chai lattes. They are so nice, warm and tasty. And so by bringing together the flavour of Chai and snickerdoodle cookies, you have a love child so amazing I just had to share it with you all.

These cookies are actually really simple to make, and pretty quick as you don’t need to rest the dough in the fridge before rolling. Its really easy to roll the cookies out as well, you just make little balls, roll them in sugar, and there you have it! They are a perfect winter treat as the spice of the chai balances the sweetness of the cookie.

I took these into work and people were having more than one, which I think is a pretty good sign of how addictive these little cookies are. Once you have one, it’s hard to stop. So make sure you make enough, and try not to eat all the cookie dough!

Chai Spiced Snickerdoodle Cookies

Preparation Time 20 minutes
Cooking Time 10 minutes
Serves 25-30 cookies

Ingredients

·      2 ¾ cups of plain flour

·      1 teaspoon of bicarbonate of soda

·      ½ teaspoon of baking powder

·      1 cup of caster sugar

·      ¾ cup of brown sugar

·      ½ teaspoon of salt

·      2 ½ teaspoons of ground cinnamon

·      1 teaspoon of ground ginger

·      1 teaspoon of ground cardamom

·      ½ teaspoon of ground allspice

·      ¼ teaspoon of ground black pepper

·      1 cup of unsalted butter, softened

·      1 egg

·      ½ teaspoon of vanilla extract

Directions

1.     Preheat the oven to 180 degrees Celsius. Line two baking sheets with baking paper and set aside.

2.     In a bowl, sift together the flour, bicarbonate of soda, baking powder and salt. Set this aside.

3.     In a medium bowl, combine the two sugars, cinnamon, ginger, cardamom, allspice and black pepper. Remove a ¼ cup of the sugar-spice mixture, and put this in a small bowl for rolling the cookies before baking.

4.     With a stand mixer or electric handheld mixer, beat the butter and the rest of the spiced sugar together in a large bowl until light and fluffy. This should take about 3 minutes.

5.     Beat the egg and vanilla extract into this mixture until fully incorporated.

6.     In batches, slowly mix the flour mix into the wet mixture, ensuring each time it is just combined before adding more.

7.     Roll about two teaspoons of the dough into balls per cookie. Once in a round ball, roll this in the reserved spiced sugar before placing on the prepared baking sheet, about 1 and a half inches apart. Continue to roll until you have no dough left.

8.     Bake for 8-10 minutes until golden brown and cracked. When you take the cookies out they will be a little soft, but will harden as they cool.

9.     Leave on the baking trays for 5 minutes to harden, and then place on a wire wrack to cool.

And there you have it! I told you these were simple cookies. They taste delicious straight out of the oven, just like a nice warm cup of sugary chai tea. They are also delicious with a nice cup of coffee or tea, and last about 3 days (if everyone doesn’t eat them before then!) As I said, these cookies are pretty addictive, and it’s really hard to stop at one. So make sure you bring enough if you are sharing them with friends – perhaps you might want to make two batches!
